I read that STO is supposed to take place post-TNG era, but if that is the case, why are TNG era ships being used to advertise the game?

Because they're well-known and will be in the game.

Starships have a lifespan of it seems up to 100 years. If we see really old ships in ST:O like Mirandas and Excelsiors who will be like 130 then apparently they love watching Antique Roadshow as much as my mom.

Starfleet vessels (According to canon, in movies, series and books) have a pretty long shelf life.
