There won't be any "New" Races so I'm told. But if I can play as a cardassian, that would be interesting. The other issue is that the more different races, then more different ship designs to make. Meaning they have to make a Federation, Klingon, Cardassian interiors all very different, and trying to make a real ship with hallways, bars, bridges, elevators, med bays, holodecks, etc. will be very hard by itself.

there are bound to be new races because there are thousands of races and species undiscovered :)

I know it would probably never happen but Caitian or Kzinti. (Kzinti have their own world that they come from and series of books, but on the other hand they were brought into Trek, but Caitian are more trekish and it is thought that they were inspired from the Kzinti).

It would be nice if they had 2 sides...the Federation(Human,Vulcan,Klingon) and the "Enemy"(Cardassian,Romulan,Borg,<insert favorite "bad guy here">).....would make for some interesting PvP play :)
