About how fast an internet connection would you need to play STO without it lagging much or at all? Mine is about 2 or 3 Mbps, is that fast enough?

depending on distance from the server lcoation, yes its fine. Anything over 1mb would be enough.

However if you are in new zealand and the server is in the UK (only an example), your still going to get lag due to the time required to send a signal from your home to the server and back again.

Only thing that may take a while is downloading any patches and the like, but thats to be expected.

Well said from someone in the 24th century. :)

Don't just go by upload/download speed. You also need to look at "ping" and "trace route" numbers. You can have a fairly good upload/download speed but if your ping is erratic your game WILL lag. If you do a Trace Route you may find that you have a large number of "lost packets" and that too can cause a lot of lag issues.

You can go to a site like http://www.speedtest.net/ and check what speed/latency etc.. you get to a particular part of the world. I think they said that CO's servers are in Boston(?) so STO would probably be the same (i think i saw a post that said that). So you could go to http://www.speedtest.net/ and select a spot in Boston. It will give you an rough idea anyway. Any DSL/Cable connection would be just fine.

3mb is plenty

I have 20mb/5mb fiber optic connection
I get a ping of like 3-5 in most games. its kinda over kill.

EDIT: Went to the speed test site. I got like 91ms for ping from Boston. I live near Portland, OR.
I wonder if the ping reporting in most games is broken or if it was just some fluke with the website.
