When I first heard about the game I thought I would get a Prometheus class. Then I changed my mind to a Defiant. And now I'm not sure again. I really want something that has a lot channelled toward exploration but I want it to be able to pack a punch if I get into a fight. Any suggestions???

get the oberth class and see if it really is a cursed ship
You would be looking at the heavy cruisers/explorers I suppose. Ambassador, Galaxy, Sovereign, NX-91001, etc.

Galaxy, Sovereign, the new nameless ship class, no idea if the Excelsior and Ambassador are still around in the future the Nova seems to have punch too, and the Intrpepid class isn't that bad either.

Bird of Prey all the way. A squad of those will destroy anything the Federation has. >:)

I'm liking the Nova appearance personally. Although I might switch out the saucer section for the donut section ;) I like the way those look.

Most likely, many of the ships shown in the TV series will show up, and some of them likely will not.
Those that likely will not show up as playable ships.
TOS Ships, Alternate timeline ships, anything from ENT (other than redesigned ships).

Its possible, but you'll also have to take into account how much it has in terms of power output, its a fairly small ship.
Seems the Centaur is going to be a tier 1 ship; so I doubt it would ever be all that great no matter what you do to it.
That's not going to stop me flying one whenever I can get away with it mind you :D

I've heard the Akira class is awesome in STO. They're built to fight, so they should cause the Klingons a few headaches. I've liked the design for a while so there may be one with a Martian in command.

Well,
The NX-91001's as of yet unnamed class is in, as are the Centaur, Miranda, Saber, and Galaxy.
The Intrepid, Defiant, Nebula, Prometheus and Sovereign have all been mentioned.
The Excelsior, Steamrunner, Nova, Akira, and Norway all seem likely too.
That's 15 ships, not including any original Cryptic/Perpetual designs (several are shown in the trailer). So that's looking at about 17-20 or so ships for the Federation alone. Others like the Constitution, Oberth, Ambassador, and Constellation might also work their way in, but who knows?
I'll stick with my 17-20 guess for the Federation, and then I'd expect a comparable number (give or take a few) for the Klingon Empire too. So maybe 30-40 ships total? not including the ability to customize and switch out parts to make new variants.

Of course almost EVERYONE is going to want to start with one of the ships they deem as "cool" and/or "powerful", which can be anything from a Valiant Class ship(the real original class name of the DS9 Defiant NX/NCC-74205 and Sao Paulo/Defiant(2)NCC-75433, a Sovereign class starship like the Enterprise E etc.Imo Cryptic ought to make those available to players as goals of progression, but not make them easy to get nor available in the game right away, unless they are to be used specficly on/for certain missions.
When SOE made Jedi available to everyone in SWG and then made them far to easy to achieve, it basicly put the nails in the coffin of that game and all that was left in under 9 months were a bunch of immature jedi and broken bounty hunters runnings around complaining about there being nothing to do.We know the state of that gaje now.The goal of STO should be character progression game throughout and not about what ship the pc has in their loot bad.If Cryptic goes that route them STO will assuredly end up like the 3/4 dozen other mmo's currently out whose online lives are hanging by a thread very shortly after launching after multimillion dollar development times, like Conan,Vanguard,Tabula Rasa,SWG,ETC.,ETC..

I'd say that the Federation will start with the Saber and the Klingons will start with a Bird of Prey.
