Since we can customize our own bridge crew members what races do you want to see fill the positions on your bridge crew?
Captain Myself Human male!
1st officer: Vulcan Female (pure vulcan logic to give me perspective)
Chief Medical Officer: Trill Female (female bedside manner and the generations of experience a trill can bring)
tactical/2nd officer: Andorian Male
Helm: Bajoran female (yay ensign ro)
Chief Engineer: Not sure yet

I have not seen a official list of bridge crew\senior officers but based on the list you have here (and addng a couple more) is my crew:

not sure if medical or engineering will count as bridge crew or not, but certainly senior officers.
also, under no circumstances will a female orion be a member of my crew, i wont be needing all my men getting all screwed up and horny.
if i can choose, repair crews will be orion and gorn, assault teams will be klingon and nausicaan, if there are assault teams.

actually i have re-thought my crew. Im still a vuclan male but the rest will be a mix of betazoid and deltan females. ALL officaly functions will need to be conducted in the buff

Orion, Betazed all led by the Romulan Commander from The Enterprise Incident. For some reason she is just hawt to me. Yeah, she's like 80 now, but I'm talking about 1968. Now, though, I'm a little creeped out cause I just realized my wife looks like her.

If I can have a fox-race, then my captain will be Captain StarFox of the USS Kitten (Defiant class)
otherwise,
Captain: Caitian (a cat person, like from Star Trek V)
1st Officer: Betazoid female (however skantily clad she want's to dress)
Chief Medical Officer: Human male (with Macoy like character)
Tactial: Orion female (naturally, the Betazoid will keep her activities honest, and I'm sure she'll come in handy with persuasion)
Helm: Andorian/Vulcan halfling (doesn't matter what gender, they're teal color will annoy the doctor to no end)
Chief Engineer: Telorite male (dialog alot like Scotty: "Warp power" "I just don't have the power!... we need more Dilithium crystals... repairs will take a week with this team--but I'll have it done in 2 days.")
Communications officer: Ferengi (and no, he never accepts collect calls, even distressing ones.)
Klingon:
All Klingon, what do you expect? All other races are slaves and serve the empire, not warriors with a place among the honored dead. If you're home-world is in Klingon space, you can expect to be used as long as you're useful for the Empire's needs, when that runs out so does patience and you find yourself at the end of a disrupter. The last time the Empire tried to play nice and have friends was with the Federation, and appearantly that's changed. So I don't believe you'll have any choice as to what race of warriors are on a Klingon vessel.

Oh wow, forgot Deltan. ... I guess she'll have to be either Transport Chief or Head Nurse.
Definitely conducting Official Briefs, out of the briefs. >^_^<
Don't worry, I'll have all communica's in head-shots... or maybe a "hailing robe" near my captains chair, just in case we encounter anyone that doesn't like seeing nude. There will be a disclaimer message at the beginning of any visual feeds: "Please wait for visual while we find our clothes." Or something to that effect.

Okay, I'm definitely gonna make the Deltan female my Teleporter Chief: and she'll have this evil grin as your clothes don't seem to make it through the bio-filters.
OH additionally:
Ensign Anon: Tribble (yes, you won't know if they died on the away mission because they'll have doubled by the time we beam down)
Bartender: Romulan (he always get the best stuff)
Science Officer: Nausican (or however you spell it, he sure cant, and doesn't know why he's Science officer; but hates my Chief Engineers constant complaining and always thinks the answer is "KILL IT")
Head Chef: Klingon (yes, this'll be the first time we've needed a chef since replicators were invented, but the Ensigns just keep going after the food... and he's the only one that can stop them.-- we generally ignore "shots fired in the galley")
Additionally my ship always gets the Expected Mothers parking at space dock: that's right, our compliment of Ensigns won't go down.
Needless to say, "Deciplined Ensigns never make the menu--the captain coughs up furballs, not digests them!"
Still, the turbo-lift music is set to "Constant Purr"
Instead of "Sir" the crew must say "Meow"
"Meow, what's so funny? You think this is some sort of a game meow?"
A normal away-mission: Captain of the USS Kitten beams down with Tactical and Science officers and Ensign Muurrrrrr;
five seconds into our away mission, Ensign's vaporized, but another Ensign pops out from one of our uniforms (now you see why we must be nude during briefings...), after fighting with a dangerous Catnip monster, the Science officer comes up with a brilliant plan to save our jeopordized captain: kill it! Luckily for the big bad plant monster, the Tactical officer persuades the beast with some dancing and we all beam back aboard--with or without the Ensign: there's more up there anyway and it'd take too long to beam that many back.
More scary episodes have to deal with the Aquatics... the Captain can't seem to talk face to face with them... something about aquaphobia and the desire to eat their relatives in a Sushi banquet--but it was in their honor!

I understand very well what Deltans are, but I find it very difficult for me to be attracted to a bald chick. Additionally, they aren't allowed to have 'relations' with nonDeltan crewmembers, per their agreement to enter Starfleet service.
Besides, the updated Orion chicks are wearing blatant ripoffs of Leia's metal slave bikini. Of course, it fits....and I like it....and green is pretty hot for some reason.

Chief Security Officer: Andorian male (even Klingons respected Andorian warriors).
Chief Science Officer: A Q (taking time off from omniscience/omnipotence, or was that punishment?)
Chief Engineer: Vulcan female (Vulcans were long respected in Warp Drive technology)
Conn/Helm: Romulan female (if we are allowed to fully customize our crew).

Well the race creator should give you the ability to make most any race that isnt already added. I think at least. But I was planning on using the race creator to make races from trek not included in the game.

Well not technically but when they say bridge crew I often tend to stick them in since they are senior officers and in every version of trek ever theres always been a ce and cmo as part of the senior staff. I would hope that cryptic will include those roles since some of the most memorable and faveorite characters ion trek have been cmo or ce. What Tos be without scotty and mcoy? Or Tng without crusher and geordi?

I just realized how prohuman Starfleet is. I can find very very few references to the existence of nonhuman Skippers. The only one with a nonhuman name is Xon, and I'm almost certain he's a Vulcan because he was a proposed Vulcan character in the 'failed' Phase II project.

It may be that our ability to chose which race each bridge member is could be limited to what's available at a starbase.
From what I've gathered so far, your choices will be limited by the amount of Prestige you have accumulated; using these Prestige Points to "buy" available crew members and/or creating them and using your points to add characteristics/abilities to them. I'm not certain about this, but it seems to be the direction that the Devs are taking.
Personally, I'd like to see a mechanic in place which would allow you to customise your crew member in this manner:
Say you start with 100 Prestige Points, accumulated from several successful missions. You visit a starbase and search the crew manifest for a new Science Officer. You find 2 Humans, 1 Vulcan, 1 B'jorn, and 2 Andorians available. Each of them are listed as Science specialists (there would be other crew members available, but they have other specialties).
Each of these crew members would have a Science Ability rating; the higher the rating, the more Prestige Points they will cost you. In addition, you can increase their Science Ability (or other stats) by spending additional Prestige Points.
So, say the Vulcan has the highest native, or base, Science Rating and costs 100 Prestige. They would be a good choice, but you really want an Andorian at that Bridge station. The Andorian's rating is several points less than the Vulcan's, but they cost only 60 Prestige. You could use your remaining 40 Prestige to "upgrade" the Andorian to the same Science level as the Vulcan.
I can think of several other ways that this could be done, but I thought that this would be a good example.

The devs said somewhere you could create your crewmembers and use the race creator to customize your crew members

scotty and mcoy spent more time on the bridge than in their respective departments.
laforge and crusher/polaski were more 50/50
but i also think u should get one random red-shirt/ specialist with every away team. someone who can die before the first commercial break. they should be NPC and randomly generated

Besides a Vulcan XO not sure what my other crew members will be. I would like some reptilian race as maybe security/tactical.
I want my entire security staff to be Andorians or Reptilian. (tired of seeing entire security teams of humans half the size of Worf, need something a little more indimidating).
Also if mental powers are going to be used other crew members will be from races with these abilities.
The only human on my ship will be me.

This is where I've been thinking there's a distinction between the Federation and Starfleet: I've been rewatching the series(es) and noticed how Daniels from the future isn't a member of Starfleet (though he'd be honored if he were), but he does serve aboard the Federation ship Enterprise J. The series is also big to point out that Starfleet existed before the Federation formed. Naturally, after the Federation was formed, members of the Federation took part in the fleet. However, "Starfleet" would still refer to Terran's space ventures, even though they use Federation technology with Federation crew. So, I think that Starfleet does directly point to humans, but the Federation is composed of many members and all contributing to the same goal... I'm also assuming that any nonTerran humanoids that put the Earth's best interest at heart would be "nationalized" Earthers, and probably count for being elligible for Starfleet positions. So, I'm sure the reason for low numbers of nonhumans has to do with the fact that they don't have to be in Starfleet to get the benefits of being in the Federation. Eeerrr, I think, I'm still trying to figure it all out.
